BREAKFAST RICE with APPLES and RAISINS

 

This plant-based breakfast rice with Apples and Raisins is one of the most popular Instant Pot recipes I make, its’ quick and easy and you can substitute the raisins with your favorite dried fruits like cranberries, apricots or blueberries. 

It’s a creamy, hearty breakfast that will keep you full all morning.

Ingredients

  • 2 cups brown rice
  • 4 cups water
  • 2 cups rice milk
  • 1 Tbsp. cinnamon
  • 1 apple, diced
  • 1/4 cup raisins or cranberries
  • maple syrup to taste
  • 1 Tbsp. chia seeds

    DIRECTIONS

1.   Pour brown rice and water into your Instant Pot. Press manual and adjust time to 22 minutes.

2.   Once done, allow your pot to come to natural pressure release for 10 minutes. Then release any remaining pressure.

3.   If you doubled your recipe to have brown rice for dinner, take it out and set aside now. If not, skip this step.

4.   Pour in your milk, cinnamon, diced apples, and raisins. Stir together.

5.   Top with maple syrup to taste and chia seeds.

Classic Chicken Noodle Soup

 

Classic Chicken Noodle Soup in your Instant Pot

Here is a super easy and very tasty 5 ingredients Classic Chicken Noodle Soup made in your Instant Pot®. Add chicken, veggies and noodles cook together in the flavorful chicken broth in you Instant Pot®. Now you can have comfort food in no time with this easy chicken soup recipe. 

You can double the recipe so you have some left over.

Ingredients


  • 1/2 pound boneless, skinless chicken breast
  • 2 carrot, peeled and chopped (about 1/2 cup)
  • 1 stalk celery, sliced (about 1/2 cup)
  • 2 ounces (about 1 cup dry) uncooked extra-wide egg noodles
  • 4 cups low sodium Chicken Broth
  • Cilantro for a little freshness garnish

Season the chicken with pepper.  Add the carrot, celery, chicken, noodles and broth to a 6-quart Instant Pot®.  

Lock the lid and close the pressure release valve. Pressure cook on High pressure, setting the timer to 5 minutes (timer will begin counting down once pressure is reached- it takes about 15 minutes).

When done, press Cancel and use the quick release method to release the pressure.

Remove the chicken from the pot..

 Shred the chicken and return to the pot. 

 Season to your taste with cracked pepper, if you like it a little spicy add a little red chili flakes or if you like it a little herby add cilantro and mint (fresh is best).

Oatmeal


Dash Diet Instant Pot Oatmeal Recipes


For perfectly creamy steel cut oats in the Instant Pot is to actually use a mixture of water and non-dairy milk.

 The ratio you'll want for oats to water is 1:2. 

So for every 1 cup of oats, you use 2 cups of water.


Base Recipe

·        2 cups steel cut oats
·        3 cups water
·        1 cup almond milk
Once you add your liquid, turn your Instant Pot to high pressure, set to 4 minutes and let it build up the pressure. Allow the pressure to release naturally for about 10 minutes, then release the rest and remove the lid. Give it a quick stir and serve it up.

Chocolate Coconut Steel Cut Oats:


·        1 cup cooked steel oats
·        2 teaspoon raw cacao
·        2 tablespoons coconut milk
·        1 tablespoon maple syrup
·        A garnish of toasted coconut & chocolate chips
Add oats, cacao, 1 tablespoon coconut milk and maple syrup into a bowl. 
Stir to combine. 
Top with coconut chips, chocolate chips and the rest of the coconut milk.

Potato Soup in an Instant Pot

 Potato Soup in and Instant Pot

This recipe delivers everything you love about potatoes in a creamy, Chicken broth provides the perfect savory base for the soup, and the Instant Pot® makes preparation fast and easy. I use the russet potatoes in this soup it helps to provide great body and texture.

Ingredients

  • 4 slices bacon, diced

  • 1 large yellow onion, chopped (about 1 cup)
  • 2 cloves garlic, minced
  • 2 pounds russet potato, peeled and cut into 1/2-inch pieces (about 6 cups)
  • 4 cups Low sodium Chicken Broth
  • 1/4 cup sour cream
  • 1/2 cup shredded Cheddar cheese
  • 2 green onion, sliced (about 1/4 cup)
  • 1 teaspoon of fresh thyme

On a 6-quart Instant Pot®, select the Sauté setting. Add the bacon and cook until crisp, stirring often.  Remove the bacon to a paper towel.  Pour off the fat.  Add the yellow onion and cook for 2 minutes, stirring occasionally.  Add the garlic and cook and stir for 30 seconds.  Press Cancel.

Add the potatoes and broth.  Lock the lid and close the pressure release valve. Pressure cook on High pressure, setting the timer to 6 minutes (timer will begin counting down once pressure is reached- it takes about 15 minutes).

When done, press Cancel and use the quick release method to release the pressure.

Stir in the sour cream.  Using an immersion blender, blend the soup in the pot until desired consistency. 

 Season to your taste. 

Serve topped with the cheese, bacon, or cilantro or green onion or chives

Chicken Tortilla Soup

 

Chicken Tortilla Soup

A classic filling soup recipe adding a combination of veggies and chicken broth, then add in some spices, tomato paste, black beans and corn. 

The Instant Pot® brings all the flavors together instantly , make sure you make plenty as this recipe tastes better the next day .

 

Ingredients

  • 1/2 pound boneless, skinless chicken breast
  • 1 carrot, peeled and chopped (about 1/2 cup)
  • 1 stalk celery, sliced (about 1/2 cup)
  • 1 can (about 15 ounces) black beans, rinsed and drained
  • 1/2 cup whole kernel corn
  • 2 tablespoons tomato paste
  • 2 teaspoons ground cumin
  • 1 teaspoons chili powder
  • ½ teaspoon Red Hot Chili flakes
  • 4 cups low sodium Chicken Broth

    Cooking Directions

Season the chicken with salt and pepper.  Add the carrot, celery, chicken, beans, corn, tomato paste, cumin, chili powder and broth to a 6-quart Instant Pot®.  

 

Lock the lid and close the pressure release valve. Pressure cook on High pressure, setting the timer to 5 minutes (timer will begin counting down once pressure is reached- it takes about 15 minutes). When done, press Cancel and use the quick release method to release the pressure.

 

Remove the chicken from the pot.  Shred the chicken and return to the pot.  Season to your taste.  

Serve topped with nacho chips, fresh chopped cilantro, avocado or sliced jalapeno pepper, if desired.
